1 cup plain flour
½ tbsp baking powder
¼ cup grated cheese (I used cheddar cheese)
1 egg
1/8 cup olive oil
¼ cup milk
1 cup veggies (I used chopped spinach peas and turkey ham, but you could use grated zucchini, chopped bell red pepper, chopped broccoli, grated carrot etc. You could also use tuna for some protein)
Mini Turkey Lentil Meatloaf
1lb grounded turkey or chicken
1/2 cup COOKED lentil ( about 1/4 cup dry lentil)
1 egg
1/4 tsp Italian seasoning (optional, I used thyme)
1 tsp salt & pepper ( I used 1/2 tsp only )
2 tbsp extra virgin olive oil
1/2 cup mixed vegetables ( I used peas, corn & spinach)
Preheat oven 180c, combine and mix all ingredients together then bake 25-30mins.
300g of grated potato
20g of parmesan cheese, grated (you could add more)
250g of cottage cheese (I used a 4% fat organic one)
2 eggs
black pepper
Olive oil (in a spray bottle)
Carrot & peas
Preheat oven to 180c.
Firmly press your potato and parmesan mixture into the spaces, so that in covers the bottom and up the side. Spray over the top with your olive oil and place in the oven to bake until slightly golden.
Add cottage cheese and eggs to a blender and blend until smooth. Season with some black pepper.
Once potato/parmesan crusts are golden, remove from oven and equally pour in your cottage cheese/egg mixture into each shell, so that it fills them level to the top. Add your choice of fillings. Then place bake in the oven until the mixture is set and slightly golden on top.
